But what about the most elusive–and yet simplest–of all chilled-tea brewing methods, cold-brewed teas? Cold-brewing is so easy and delicious you might just make a habit out of it. Read on to learn the secrets of the cold-brew, along with step-by-step instructions. 1. Cold-brewed teas taste sweet and smooth. This is because cold water extracts a different chemical balance from the tea than hot water. Chemically speaking, this means there are fewer catechins and less caffeine. In terms of flavor, a reduction in catechins and caffeine drops out the bitterness. 2. It’s hot out. They’re cold. And they don’t require heat to make. Enough said. 3. Cold brewing is a new way to enjoy old favorites. The shift in flavor profile is an exciting way for foodies to explore the tastes of their teas. As much as you love your favorite teas hot, you’ve probably also tried them iced or paired with foods, and maybe you’ve had them as a lattes or as ingredients in food. This is just another way to taste them. 4. Cold-brewed teas are safer than sun-brewed teas. Unlike sun tea, cold-brewed tea does not encourage the growth of potentially dangerous bacteria. Think about it: hot sun, sugar, water… sun tea is a microbe’s dream come true. One caveat for cold brewing: pu-erh and non-tea “teas” or tea-blend ingredients, like dried flowers, fruit or herbs, need a quick rinse of boiling water before you brew. Herbal blends are not typically heated during processing (thus they may harbor bacteria) and aged pu-erhs may have collected some dust over the years. 5. They’re easy to make. Five-Steps to mastering Cold-Brew Tea. Here’s how. ADD TEA–Add 2-3 TBS of whole leaf, about 1.5× the typical amount. ADD WATER–Fill with cold, filtered water, top with the strainer-lid. WAIT–Now for the hardest part: waiting. Refrigerate for 4-10 hours. Longer time extracts stronger flavor and more caffeine. White teas will brew the quickest, followed by green teas and twisted/flat oolongs, allow most time for rolled oolongs, pu-erhs, herbal infusions and black teas. SERVE–Strain and serve. Tea Is A Journey Such a simple brewing method begs for innovation. Experiment with the length of time and the type of tea you choose. To get the most out of herbal infusions (tisanes) rinse with boiling water first. A hot water rinse also wakes up pu-erh Don’t be shy about adding sweetner (organic cane sugar, maple syrup, honey), but be sure you taste your brew first. The cold-brew method seems to extract more of mother nature’s natural sweetness, especially oolongs like our Monkey-Picked Iron Goddess of Mercy, and Pineapple Coconut. You might find it’s perfect as is. Cold-brewing can also make the most of super high-end green tea senchas like Gyokuro. I’ve seen a Japanese device designed specifically to brew gyokuro by melting an ice cube above the leaves and using a kind of Chinese Water Drip Torture to tease out a super-sweet gyokuro liquer one icey drop at a time. You can get similar results–with gear you already have–by using ice water for your cold-brew and increasing the steep time.</p>]]></content:encoded>

I just expected it to be an ordinary Chinese restaurant so I never intended to go. Although there was one time I was standing at the entrance thinking to go in or not but I ended up trying something else. The restaurant is slightly different in the daytime and evening, in the daytime they serve dimsums and in the night time they serve Chinese dishes. The Chinese tea however seems fun in the daytime because from the photos on OpenRice, it shows two cups, one full of tea leaves with a lid and another cup for you to pour the tea in similar to the ones you see on old Chinese Television programmes. I did not read the reviews on OpenRice so I was not sure about the food prices, but it turned out quite economical around $100 per person, however some foods which expats and tourists are bound to pick were quite expensive such as the Lemon chicken which costs $100. But since there were so many reviews and expats eating there, the food seemed assuring. Although I looked at the menu, I did not know what to order so I left it to a local and luckily they knew exactly what to order. Personally Lemon chicken would be my pick, but it was slightly over priced so I thought it would be better off trying new and more traditional items which I would not know to order. The tea was White Peony, which was quite nice because usually the common choices are Jasmine, Iron Buddha and Oolong. It seems that this place specialises in Lotus paste too and part of the name for this restaurant means Fragrance of Lotus. At the entrance they seem to have a stall possible selling mooncakes/Lotus related pastries which I did not pay attention to at the time. Edging away from the food topic, they also had these tin pots which I am guessing they used for Phelgm??? So either the air pollution must be bad years ago or the locals here have over productive glands for phelgm LOL !! I can imagine this quote being posted on the DLopenricer blog.Anyway back to food! ★☆★☆★☆★☆★☆★☆★☆★☆★☆★☆★☆★ Fried prawn rolls wrapped in beancurd sheets:This was really nice, the oil had been drained off after deep frying and the bean curd was really flaky and delicate. When you eat them they make a noise. Inside the beancurd rolls were fresh whole prawns that had taste and didnt need extra MSG. Overall the prawn rolls were full of flavour they tasted nice with or without the worcester sauce. ★☆★☆★☆★☆★☆★☆★☆★☆★☆★☆★☆★ Shark lips with lettuce When it came, I thought they were fish maw but they were shark lips, when I knew they were lips I was expecting them to be soft like gelatin, but the texture was interesting, it was similar to cartilage, but apparently they contain alot of collagen. The lettuce beneath it soaked up the gravy so it was delicious. But since sharks are so much bigger than fish, it probably explains why the texture is like cartilage. I also love green tea blended with other flavors since I don’t like it so much by itself. In looking for yummy tea blends in the store, I found that almost all of them had undesirable ingredients, like raspberry flavor, citric acid or some other ‘flavor’. I’ve read that anything that contains ‘flavor’ should be questioned. Especially, raspberry flavor -did you know that it comes from the excretion of beaver anal glands? Yup! Now, I’m all about the whole ‘head-to-tail’ thing, and not wasting any part of an animal. But beaver anal gland juice? No thanks! The nice thing about this tea is the benefits from the tea and herbs, along with the slight boost from the green tea. It’s a perfect mid-afternoon pick me up! And quite refreshing to boot! I buy all my tea and herbs in bulk these days, it’s much more cost effective in the long run. I do have a local health food store that sells most of the ingredients for this tea blend. However, I prefer to purchase my tea and herbs from my affiliate partner Mountain Rose Herbs when I can and buy in bulk, as it saves money in the long run. Dried Raspberries can be purchased many places, I’ve gotten mine from Trader Joe’s in 1.2 ounce bags. Make sure you include the little pillow pack or fresh pack that comes in the bag of dried raspberries in your jar of tea blend. This will help the raspberries from losing their crisp dryness. 6 teaspoons green tea (make sure to use a green tea that you like – I used Gunpowder Green Tea) 6 teaspoons chamomile (optional) 1/2 cup hibiscus flowers 6 teaspoons orange peel (optional) 1-2 ounces dried raspberries, crushed a bit 6-8 teaspoons green leaf stevia (optional) Blend all together in a mason jar, (make sure to include the little white fresh pack from your bag of dried raspberries) place the lid on and shake to combine. Use about 4-6 teaspoons to make one quart of tea if you are going to make it iced. Steep 3 minutes -no more! Or use 1 heaping teaspoon to have a cup of hot hibiscus raspberry tea. Enjoy! A small piece of wood with a laser-burned message that read, "June 30, 2015. Please join us for tea and wishes overlooking the city. Sunrise, Griffith Park." The only other instructions directed recipients to meet at the Griffith Observatory parking lot at dawn and "follow the lights." So at 5 a.m. on Tuesday morning, a time when the freeways are largely empty and the sky is still the color of ink, I find myself at the Observatory parking lot with nearly three dozen other people, all responding to the same invitation. On the north end of the parking lot, we find an arrangement of ceramic teacups each bearing an LED candle. Each guest is given a cup, along with a small map on vellum emblazoned with the profile of a griffin. A red line marks a path that zigs then zags up the flanks of Mt. Hollywood, past Dante's view, before coming to rest on Mt. Bell, to the northeast. Our destination is the Griffith Park Teahouse, a diminutive wood structure, loosely inspired by Japanese architecture, which did not exist until Monday night when it was surreptitiously installed by a loose collective of artists. Tuesday morning's mission was to inaugurate the pavilion — which offers breathtaking views of the Verdugos and the San Gabriels, not to mention the 5 Freeway — with an informal tea ceremony and a performance by an opera singer. Invited to the event were friends and acquaintances of the artists (who rarely get permission from official channels to do their work and prefer to remain anonymous). Around 5:15 a.m., as the blackness of the sky gave way to steely grays streaked with bits of orange, the group ascended the mountain, past the Hollywood sign and the blinking lights of Los Angeles, up a narrow horse trail, to the teahouse, an 80-square-foot structure made from singed pieces of wood reclaimed from trees burned in the devastating 2007 Griffith Park fire. Three at a time, people entered the teahouse, where they were served green tea and almond cookies, and where an attached bell was occasionally rung. In the distance, just out of sight, the opera singer arpeggioed. "It's just lovely, " says Ghassan Sarkis, a math professor at Pomona College who attended the ceremony draped in a web of LED lights. "It jolts you out of the grooves of daily life." The ceremony is over, but the Griffith Park Teahouse remains ... for now. Perched on a ridge, within view of several mountain ranges, the artists have left it behind as "a gift" to Los Angeles — one they hope the city will accept. "Part of the experiment is seeing how the park and the public reacts, " says one of the core artists who masterminded the plan — a young woman who has worked on installation design at various Southern California museums. "There's something interesting about observing what will happen." Certainly, this is no flimsy structure. The teahouse was made with the help of professional wood craftsmen who helped develop the building's design and engineering. The entire thing was slipped into the park in pre-fabricated pieces and bolted to an old foundation that at one point likely belonged to a utility shack, but had since been reduced to an exposed wedge of concrete and rebar. "I saw it about six years ago, " explains the collective's ringleader, whose day job is in the film industry. "I come to the park to run a lot — and I would just see it and I kept thinking we could do something with it." This isn't the first time the group has staged a guerrilla act in a public space. They once held a tea party for friends on a traffic island in downtown L.A. and installed a vending machine full of scented chip bags on a street in Silver Lake. "The idea of a teahouse rose to the fore early on, " he adds. "I'm a big fan of tea ... and I'd looked at teahouse design books and I happened to visit Japan during this time, where I spent a lot of time looking at temples." The pair roped in a friend, a woodworking apprentice who had, quite coincidentally, helped design a wooden teahouse in Washington state. He helped connect them to a professional woodworker in the Glendale area who helped refine the group's initial design concept. Six months ago, they got to work. The idea was to build their teahouse entirely out of reclaimed wood: trees that were killed in the 2007 blaze (many of which the group harvested from the area around the Greek Theatre), as well as felled redwoods that were destined to be mulched at the park's composting facility. (The park has removed redwoods in recent years since they are not native to the area and require a lot of water.) "The entire design came from the amount of wood we had, " says the woodworking apprentice. "Decisions were entirely based on the availability of the materials." Adds the ringleader: "We didn't cut anything down. We only took what was already dead and on the ground."</p>]]></content:encoded>

WASHINGTON– Former Alaska Gov. Sarah Palin is expected to endorse business mogul Donald Trump for president Tuesday evening, snubbing tea party ally Sen. Ted Cruz. “I’m proud to endorse Donald J. Trump for president, ” Palin told The New York Times in a statement provided by Trump’s campaign, just hours before a planned announcement at an Iowa event. Trump teased a big name would join his supporters. Multiple reports showed Palin traveling to Iowa on a plane used for Trump’s campaign, hinting at the endorsement. “I am greatly honored to receive Sarah’s endorsement, ” Trump said. “She is a friend, and a high quality person whom I have great respect for. I am proud to have her support.” Cruz and Palin have long teamed up on tea party issues. Palin campaigned for Cruz’s 2012 Senate bid, and he credited her support for helping him win. In September, Palin, Cruz and Trump headlined a rally against the Iran nuclear deal at the Capitol. Trump garnered most of the attention. By November, Palin was already leaning toward Trump, when asked who was standing out among the GOP field. Cruz spokesman Rick Tyler said Trump was not the kind of candidate a conservative like Palin should back. Backing Trump “would be a blow to Sarah Palin, because Sarah Palin has been a champion of the conservative cause and if she was going to endorse Donald Trump, sadly she would be endorsing someone who’s held progressive views all their life on the sanctity of life, on marriage, on partial-birth abortion, ” Tyler told CNN. “Donald Trump claims he’s changed all those views. But I think if it was Sarah Palin, let me just say I would be deeply disappointed.” Cruz downplayed the dissapointment after Palin confirmed the endorsement. “I love Sarah Palin. Sarah Palin is fantastic. Without her friendship and support I wouldn’t be in the Senate today, ’ Cruz told our own Gromer Jeffers and other reporters traveling with him in Center Barnstead, NH. “Regardless of what Sarah decides to do in 2016 I will always remain a big, big fan.” At the endorsement announcement Trump initially avoided bring up Cruz, rattling off a list of new polls showing Trump in the lead. “I don’t want to be confrontational, ” Trump said. Palin also skirted Cruz during the announcement. “Asked why I would jump into a primary, kind of stirring up, and chose one. over some friends who are running and I endorsed a couple others in their races before they decided to run for president.
