  501. <h2><strong>Ingredients:</strong></h2>
  502. <ul>
  503. <li>1 pound Italian sausage, casing removed</li>
  504. <li>2 cups sliced mushrooms</li>
  505. <li>1 small onion, diced</li>
  506. <li>1 cup Arborio rice</li>
  507. <li>4 cups chicken or vegetable broth</li>
  508. <li>1/2 cup grated parmesan cheese</li>
  509. <li>2 tablespoons butter</li>
  510. <li>Salt and pepper to taste</li>

  512. <h2><strong>Instructions:</strong></h2>
  513. <ol>
  514. <li>In a large skillet, cook the Italian sausage over medium heat until browned and cooked through. Remove from the skillet and set aside.</li>
  515. <li>In the same skillet, sauté the mushrooms and onion over medium heat until they are tender and lightly browned.</li>
  516. <li>Add the Arborio rice to the skillet and stir to coat with the mushroom and onion mixture.</li>
  517. <li>Add the chicken or vegetable broth, 1 cup at a time, stirring constantly and allowing each cup to be absorbed before adding the next.</li>
  518. <li>Once all of the broth has been added and absorbed, stir in the cooked sausage, grated parmesan cheese, and butter.</li>
  519. <li>Season with salt and pepper to taste.</li>
  520. <li>Serve hot, garnished with additional parmesan cheese and chopped fresh herbs if desired.</li>

  561. <li>Before you begin, preheat your oven to 375°F. Then in a skillet, warm up some olive oil and simmer the mushrooms and garlic until they are softly browned and tender.</li>
  562. <li>Allow the baby spinach leaves to simmer in the skillet until they are wilted, and this should be achieved within 2-3 minutes.</li>
  563. <li>Take the skillet off of the heat, then gently fold in the shredded mozzarella and grated parmesan cheese.</li>
  564. <li>To give your chicken breasts an extra flavorful kick, delicately create a pocket in the center of each one and fill it with a savory mix of mushrooms and spinach. Then add salt and pepper to taste; you&#8217;ll be amazed by the delicious results!</li>
  565. <li>Heat your skillet over medium-high and make sure to evenly brown each side of the chicken breasts. Cook until they have a golden hue, then you&#8217;re ready to serve!</li>
  566. <li>Place the chicken breasts in a baking dish, then bake them until they are cooked through and the cheese is oozy and golden &#8211; that should take between 25-30 minutes.</li>
